Middle February

Things are looking and sounding decidedly more spring-like. After a string of 40+ days, the birds are singing and have an air of busyness about them, even though it's much colder again. The 10 day forecast shows even more days in the 40's and 50's so I can start planting indoor seedlings so they'll be ready to plant in the yard come April. My salad greens project is a success. I have greens almost every day for a salad or to add to a grain bowl. They are so pretty!

Lettuce was the only thing that really didn't produce much at all - which is fine as I prefer the hardier leaves of beets, spinach, and arugula. I added roasted sweet potatoes and broccoli, blue cheese, sunflower seeds and a hard boiled egg and drizzled with balsamic vinaigrette for a vegetarian dinner.

Tues 2/15 was a great sunny day for a short hike at Bennett Hill Preserve and lunch with the Mates. It's been awhile since I climbed a tree, but climbing trees is good for the soul. Three miles in the woods at 15 - 19 degrees F was enough to stoke my hunger, so a pilgrim wrap at the WindowBox cafe satisfied it.

A trip to the grocery store rounded out today's program. I was hoping to do no grocery shopping in February but I am down to 2 eggs and a small slice of cabbage in the fresh produce area. So I should be set for the rest of February now. I'm curious to see if I can use up my stores in the freezer and pantry and keep grocery shopping to a minimum until that is done. Then I'll restock with food that won't be out of date so soon. I don't know why there is a 4 pack of tuna in the pantry - I really don't like tuna!
